  • Cinnamon stick (1)
  • Cloves (2-3)
  • Cardamom pods (2-3)
  • Onion (1 medium-sized, finely chopped)
  • Ginger paste (1 tablespoon)
  • Garlic paste (1 tablespoon)
  • Tomato puree (1/2 cup)
  • Turmeric powder (1/2 teaspoon)
  • Red chili powder (1 teaspoon)
  • Coriander powder (1 teaspoon)
  • Cumin powder (1 teaspoon)
  • Garam masala powder (1/2 teaspoon)
  • Salt (to taste)
  • Water (1-2 cups)
  • Fresh coriander leaves (for garnishing)


  1. Peel and cut the potatoes into small pieces. Wash them thoroughly and soak them in water for 10-15 minutes.
  2. Heat the oil in a pan and add the cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Fry them for a few seconds until they become fragrant.
  3. Add the finely chopped onion and fry until it becomes golden brown.
  4. Add the ginger and garlic paste and fry for a few seconds until the raw smell goes away.
  5. Add the tomato puree and cook for a few minutes until the oil starts to separate from the mixture.
  6. Add the turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala powder. Mix well and fry for a few minutes until the masala is cooked.
  7. Add the potatoes and salt to taste. Mix well and fry for a few minutes until the potatoes are coated well with the masala.
  8. Add water (1-2 cups) and mix well. Cover the pan with a lid and let it cook on low flame for 10-15 minutes or until the potatoes are cooked.
  9. Once the potatoes are cooked, turn off the flame and garnish with fresh coriander leaves.
